If you have a 9-to-5 desk job, preparing your own dinner when you get home can be difficult. While many people choose to cook make-ahead meals and simply reheat them, there are also quick meals you can prepare at the last minute.
Here are three simple recipes that you can make after office. They’re simple, easy to prepare, and best of all, fits your weekly food budget.
1. Chicken Noodle Soup
It’s probably the easiest dinner to prepare if you’re craving for a hot soup after work. Sauté carrots, onions, and celery, and then add shredded chicken meat, choice noodles, thyme, chicken base or stock and some water. Bring to a boil. Feel free to add some more ingredients, such as meatballs and bok choy.
2. Pumpkin Soup
Boil down chunks of pumpkin or roast them in the oven until they’re tender. In a blender, blitz together tender pumpkin bites, garlic (optional), heavy cream, and some fresh thyme. You can also add some broth (chicken or vegetable). Add salt and pepper to taste. Now you have a hearty and tasty pumpkin soup.
3. Cauliflower Fried Rice
Break an entire cauliflower head into small pieces and blitz them in a food processor until they resemble slightly larger bread crumbs. In a skillet, melt butter in olive oil and sauté the minced garlic and some sweet onion. Add the cauliflower and some frozen vegetables (carrots, green peas, and corn).
Crack an egg and cook as you would a typical fried rice dish. Add salt and pepper. To make it more special, you can add shredded chicken meat and some parmesan cheese slivers.
These recipes are not only easy to make but are also quick and inexpensive. While they’re good to serve to guests, they’re best savored alone after a busy day at the office. Forget the takeout.
